The story
Brasserie Le Bon Mori in Hermsdorf serves recognized French cuisine to the Spree region. Chef Moritz Borowski established the kitchen after training across Switzerland and New York, returning to his hometown in 2023. He named the establishment after a childhood nickname given by his uncle. The Schlemmer Atlas awarded two spoons to this brasserie for delivering traditional dishes straight from the pass.
Hand-cut beef tartar arrives with butter brioche, while crispy fried blood sausage pairs with Calvados apple and pickled onions. Tagliolini tossed with fresh chanter mushrooms forms the base of their forest-style pasta dish. The kitchen shifts its focus throughout the year, moving from seasonal game preparations to winter duck stews. Guests typically order orange crème brûlée caramelized with brown sugar for dessert, while glasses of wine accompany this French cooking without pretension.
