Restaurace Savoya Špindlerův Mlýn: Modern Czech Cuisine Since 1881

Legacy and Mountain Setting

Restaurace Savoya occupies a central spot in Špindlerův Mlýn within a hotel that has welcomed guests since 1881. The establishment counts Franz Kafka and film star Vlasta Burian among its historic visitors, a lineage the kitchen continues today through a menu of modern Czech cuisine. Diners sit near the town park and Elbe River, using the mountain resort as a backdrop for meals built around high-quality ingredients.

Seasonal Techniques and Standouts

A 12.5 rating from Gault & Millau reflects a kitchen that adjusts its offerings daily based on ingredient availability. Starters often feature local specialties like tarhoňa pasta or fresh beef tenderloin tartare seasoned with horseradish mayonnaise and dry-baked bread chips. Main courses highlight proteins such as Black Angus beef tenderloin served with truffle sauce, alongside options like pasta with octopus or the classic veal schnitzel accompanied by an excellent cucumber salad. Seasonal vegetable plates appear frequently; one notable combination pairs asparagus with polenta and wild broccoli.

Wine and Sweets

Desserts provide a rich finish, such as the Valrhona chocolate mousse paired with apricot ice cream. The beverage program supports the cooking with a curated wine list assembled by a dedicated enthusiast. Selections span regions from affordable Austrian producers to premium bottles from Bordeaux and Champagne, ensuring drinks complement the evolving culinary concepts without overwhelming the flavors.

The restaurant and hotel Soyka is located on the pedestrian path from the bridge towards the Medvědín cable car and focuses on traditional Czech cuisine. Here you can enjoy a Dutch-style minced piglet meat schnitzel with mashed potatoes, tomato sauce with elbow macaroni and beef top blade, which is like a cake – soft and juicy, then the roast beef ribs big enough for two, delicious fried cheese Blaťácké zlato, and a specialty from the Giant mountains – cream soup with dill and potato, which is perfectly seasoned and served with plenty of porcini mushrooms. The portions are truly for hearty men, but if you have room left, do not miss the soft and tender buns with vanilla foam, which get better year by year. A shot of rum in the foam will protect you from the harsh weather, especially in winter. If you want them for your children, let the staff know in advance. This is one of the few restaurants where you can try the local Hendrych beer in addition to Pilsner. If the friendly and welcoming staff make you want to stay longer, order some cracklings or other delicacies to go with your beer.
