Chef Dennis leads a tightly coordinated team that treats every preparation as an exercise in restraint. Their daily work centers on slow cooking methods and careful seasoning that highlights the natural character of each ingredient. A dedicated fermentation lab supports this approach, allowing proteins and vegetables to develop deeper layers before they ever reach the pass.

Signature Plates and Seasonal Progressions

The tasting menus build around premium fish and seafood, moving from raw preparations toward gently cooked finishes. Dry aged bluefin tuna appears in two forms, one dressed with pistachio and soy cured egg yolk, the other finished with wagyu beef fat tare and shiro kombu. Irish oysters arrive alongside crisp samphire and sea grapes, while a gambero rosso tartlet brings together soy espuma, xo sauce, and tonkatsu crumbs. A dry aged striploin follows, paired with black garlic ponzu, before the evening closes with citrus ice cream layered with strawberry and yuzu custard.

Interior Design and Seating Layouts

The dining space occupies a converted garage along Samberstraat, featuring exposed concrete walls and minimal metal accents that lean toward a stark, industrial aesthetic. Collaborative design work with Jef Meyer shaped the environment to balance Japanese cooking traditions with contemporary comfort. The layout offers recessed floor seating called horigotatsu, traditional table setups known as teburuseki, and a counter facing the open kitchen. Warm lighting and curated music soften the raw architecture, creating a focused setting for extended tasting experiences.

The restaurant’s consistent attention to product quality and plating discipline earned a Gault & Millau score of 14 out of 20. That rating reflects a menu structure built around seven course sequences, typically delivering ten to twelve individual servings across the night. Guests can choose between a standard kaiseki progression or a deluxe version that adds kaluga caviar to the signature tuna course and upgrades the beef selection to a4 wagyu. The format demands a clear palate, as the chefs prioritize clean finishes over heavy sauces, letting seasonal produce carry the weight of each bite.
