For more than a decade, Benares has occupied a distinctive place in Madrid’s dining landscape. On Calle Zurbano, in the elegant Chamberí neighbourhood, it offers a version of Indian cooking that is both deeply traditional and finely calibrated to contemporary tastes. The restaurant describes itself as a pioneer of high-end Indian gastronomy in Spain, and its standing is backed by a Michelin recommendation—a recognition it has held for years, and one that remains rare for Indian cuisine in the country.

The kitchen works with seasonal produce and time-honoured techniques, adapting the flavours of India without losing their essence. The menu changes with the seasons, and a nine-course tasting menu is offered three times a year, built around the ingredients of the moment. For those new to the cuisine, the Parampara menu—named for the Hindi word meaning tradition and legacy—provides a curated introduction, with a selection of classic dishes that speak clearly to the kitchen’s foundations.

Benares also serves an executive Thali menu at lunch, designed for efficiency without compromising quality. It arrives as a single tray: a main dish chosen from six options—Butter Chicken, Vegetable Masala, or fish curry among them—surrounded by five accompaniments: cauliflower and potato with garlic and cumin, chaat-style tomato salad, freshly baked naan, pulao rice, and black lentils. It closes with Bhapa Doi, a yoghurt cream scented with orange blossom water and a seasonal chutney. The format is precise and unhurried, ideal for a working lunch.

The bar programme is equally considered. The in-house team has developed a list of signature cocktails designed to pair with the spices and aromas of the food, alongside a carefully selected wine list.

The space itself is spread across a tavern area, a main dining room, two private rooms, and a quiet terrace. The décor draws on contemporary Indian aesthetics—clean, warm, and understated. It is a setting that suits both business and leisure, and the restaurant regularly hosts private events and group dinners.

Benares remains a singular address in Madrid: a place where Indian cuisine is treated with the same rigour and respect as any European fine-dining tradition, and where the recognition of Michelin is not a badge but a confirmation of what the kitchen has been doing all along.
