The story
At Criss Studio in Hamburg, chefs Mateusz A Żurek and Jahmarley Grant translate their Polish and Jamaican heritage into a distinctive fusion cuisine. They lived together in Lisbon for several years before managing both casual and fine dining venues there. The pair relocated to northern Germany in June 2024 and spent months refining concepts through pop-up dinners. Their partnership began as a culinary collective in 2018, which established the collaborative foundation for their current kitchen.
The menu operates on seventy percent plant-based ingredients while reserving the remaining thirty percent for responsibly sourced fish and meat. Taste takes precedence over technical display, and the chefs deliberately avoid ornamental plating and heavy reliance on imported luxury goods. Guests encounter a twelve-course sequence that treats cultural boundaries as starting points rather than barriers. This modern fusion cooking methodology recently earned the Schlemmer Atlas 3.5 spoons and recognized the venue as the publication’s discovery of the year.
An art residency program rotates emerging creators through the dining room every season, ensuring the physical environment shifts alongside the evolving Polish-Jamaican fusion menu. Low intervention wines and sakes form the beverage backbone, selected strictly for transparency and environmental responsibility. The kitchen also hosts an experimental test kitchen during August weekends, where unreleased dishes undergo final refinement before autumn service.
