Barbouni remains a cornerstone of the menu, prized across the region for its firm texture and mild sweetness. Staff clean oysters on site using a careful ritual that keeps the liquor crisp and clean. Raw preparations follow a similar restraint, relying on sharp knives and minimal intervention. A thorough revitalization in 2015 widened the dining floor while preserving the original conversational layout.
